Cantine Ferrari Trento

Giulio Ferrari Riserva del Fondatore

Cru d’auteur

This is the label that identifies the best Italian sparkling wine in the world, able to meet the challenge of time and become truly legendary.

Colour and perlage A Chardonnay with delightful golden highlights against a background of brilliant yellow. The perlage is extraordinarily fine and persistent.

Nose An intense and complex bouquet, with marked minerality and enriched with exotic scents. Hints of white chocolate and hazelnut give way to balsamic notes and intriguing tones of spices, beeswax and honey.

Taste Sumptuous suggestions arise from its creamy, velvety body, with hints of acacia honey accompanied by notes of exotic fruit. The over ten years of ageing on the yeasts yield a finish of great complexity, which amazes you with its elegance and freshness.

Serving suggestions

Giulio Ferrari Riserva del Fondatore and Mozzarella in carrozza

Alfio Ghezzi
Ferrari's Chef

Ten years on the yeasts gives the Giulio Ferrari sufficient
complexity of flavour to ennoble this traditional dish:
the fine perlage contrasts with the fattiness,
while the character of the sparkling wine is a
splendid foil for the anchovies.

Giulio Ferrari Riserva del Fondatore and Mediterranean Fish Soup

It is curious how a dish that today is much sought after and versatile, a sumptuous expression of the “Mare Nostrum”, was originally created from the recovery of the small fish that remained unsold at the market.

Alfio Ghezzi
Ferrari's Chef

The extraordinary complexity of Giulio Ferrari makes it perfect for enhancing a very wide range of dishes. In this case it goes beautifully with the flavours of the Mediterranean.
